I'm taking the Week of Eating In Challenge!

When I accepted Cathy’s offer to be on the blogging team for the Week of Eating In, I envisioned myself incorporating bold new moves into my cooking repertoire.

Then, I realized that this is deadline week for Ice Cream Man‘s Off the Wookie, an annual magazine of which I am the editor. Add this to the usual responsibilities I have to fulfill and throw all of that on top of my ambitious desire to post a video and a story for every day this week, and all illusions of turning this challenge into a teachable moment come crashing down… unless, of course, the teachable moment involves me as a cautionary example.

My cooking skills, while certainly not in the category of shabby, are nowhere near the talents of the other bloggers (Ulla, Marc, Addie, Kasey and of course Cathy) setting the pace this week. If I’m going to survive the rest of this challenge, I’ll have to adjust my strategy… so, rather than going for the new and exciting, I’m going to stick to the tried and true (and slightly new), trying to represent the kitchen stylings of the single dude and hopefully providing some ways to make cooking at home easier for all.

In any case, this is already the busiest day of my week. My usual Monday schedule begins with a work shift at 8:00 a.m., breaks for errands and the writing of my (usually) weekly blog post, then eases off a bit for dinner before going right back to the office for a night shift. Knowing this, and knowing that I’d be spending every free moment of this afternoon filming and editing today’s video, I made a huge and hearty pot of red beans last night, and Amit made a jar of hummus from scratch – these are two easy, large batch dishes that can be stowed in the fridge for consumption at any time, and I ended up digging into both of them right away this afternoon.

I’ll follow up on tonight’s episode with some thoughts on whole foods in tomorrow’s story.
For now, though, watch out for an awesome dog in this video!

Monday’s Meals (A Lesson in Dietary Dysfunction… can I call this “eating well”?)
-Smoothie made from frozen berries and yogurt
-Breakfast tea
-Banana
-Red beans and Russian kasha (twice)
-Raw carrots and homemade hummus
-Bugs on a log (celery filled with all natural peanut butter and raisins)
-Peanut butter and jelly sandwich
-Blood orange

    What kind of peanut butter are you buying? I was practically weaned on chunky skippy, and all other peanut butter I’ve tried tastes like dirt to me, but I want to find a less-processed alternative, if only because my chicken-ranching brother is always giving me shit about it.

    Wow, I’ve never had that kind of fun shopping for groceries before. Skipping with friends in locked arms?!? Y’all are having too much fun!

    Doug – I actually am down with pretty much any kind of peanut butter whose sole ingredients are peanuts and salt. I think buying salted peanut butter is key; it doesn’t take a huge amount of sodium to make the difference between bland and delicious there. Trader Joe’s brand does fine for me – you may want to try that or one of the other less premium brands, because they’re probably less likely to be gritty and more like the peanut butter Skippy and Jif lovers are used to eating.

    I’m looking at your “mondays meals” list and thinking, well, YES — that is indeed “eating well.” If you meant hearty and healthy eating. If you meant foodie-level awesome dining experiences? Um, no. But good eats, all the same…

    I agree – I think when I wrote that I was just being self-conscious about the other food bloggers who *do* come up with foodie-level awesome dining experiences on the daily. Hearty and healthy eating ftw! Especially because I plan on going straight to White Castle after this week is over.
